Head Pastry Chef, Midlands, min 2 rosette experience, c£40k
The Candidate Requirement: We are looking for an exceptional Pastry Chef to continue the exceptional work currently produced by the team within this large operation. You will manage a small team and be responsible for the planning and costing of all menus (to include fine dine, bistro, Conference and Banqueting and Lounge/Afternoon Tea service) in conjunction with the Head Chef, whilst controlling all ordering for your department and ensuring that all dishes are prepared to exacting standards.
You will be able to demonstrate a minimum 2-rosette level background, have some experience of high volume operations, and have a flair and originality to bring to the team, you will be required to produce desserts and pastries such as petit fours, ice creams, sorbets, soufflés, canapés, parfaits and several breads to rosette level.
