Pastry Sous Chef, 3 rosette level, Home Counties c£30,000
The Candidate Requirement: We are looking for an exceptional pastry chef to help develop the pastry section within this large operation. You will manage a large team of pastry chefs and be responsible for the planning and costing of all menus in conjunction with the Head Pastry Chef, whilst controlling all ordering for your department and ensuring that all dishes are prepared to exacting standards. Ideally, you will be able to demonstrate some experience at 3-rosette/Michelin level as well as large scale 5 star operations, and have a flair and originality to bring to the team, you will be required to produce desserts and pastries across both fine dine, brasserie and banqueting such as petit fours, ice creams, sorbets, soufflés, canapés and parfaits to Michelin star and 5 Star Hotel level.
